The road to redemption from pig bones to vegetable stew.
Yesterday I was eating pork shank and now I’m having ratatouille! (I’ll have three bowls of it but let’s not get into my portion control issues.) Don’t be fooled by the picture, I’m not having plain vegetables; I’m eating this over a bed of 100% whole grain farro, which I heard is better than the big bowl of white rice I ate the other day.
There are lots of great ratatouille recipes out there, but I made this using Fooducate.com’s recipe, except I omitted the sugar and vinegar. They say this is six servings but for us it’s more like three!
I don’t really have a concrete plan right now for how I’m going to get in shape. I’m just doing my best to eat whatever I think is healthy and exercise every now and again. Let’s see how it goes…
